Nature's Children By Lillian Cox Athey ALASKA CLAMS. Abundant supplies of various elams can be obtained from Alaska. By reason of the depletion of the clam beds in Oregon and Wash ington, clam lovers of the Pacific Northwest are eager to find new supplies. Butter clams are taken in South eastern Alaska and razor clams in tty neighborhood of Cordova. The Oreater part of the annual harvest *f clams is canned. Only a small amount is sold fresh. This is be cause freshly shucked clams spoil quickly and it is Impossible to ship them to distant markets in a fresh state. An investigation was instigated to develop methods for handling and storing fresh Alaska clams in order to distribute them to markete on the Pacific Coast and perhaps farther inland. Clams were col lected at five beaches near Ketchi kan, Alaska. These beds are froir live to six miles from a city. Thi! would mean that the clams woulc be considered free from contamina tion from waste and sewage. The clams, in order of then abundance were: Butter clams, little neck clams, cockle clams, horse clams and mud clams. Butter anc little neck clams were used in al tests. As quickly as the clams were duf they were dropped into a tank o: fresh water and washed. Ther placed in a tank of sea water o: 2 per cent brine. Com meal wa: added to the brine. The clam; cleaned themselves for 8 to 1( hours by replacing sand with corr meal. The clams were then washec and opened by hand: the meat! placed at once in a jar packed ir crushed ice. The keeping quality of the rav clams was Judged by the appear ance and odor. After many rigic tests of many descriptions, the con clusion was reached that the use of sodium benzoate, together with buffer solutions, would increase the keeping quality safely, permitting the shipments of freshly shuckec clams from ' Southeastern Alaska to markets in the Pacific North west-later to more distant markets Driving at 50 miles an hour, t motorist .sees 14 per cent less thar he does in driving at 45 miles ar hour.
