wives of America descend upon

demanding: “Tell us once and for
all how to pronounce hors d'oeuvres.
Are wre correct in saying ‘awr
DERVZ?”
Well, ladies, let’s look at the
phrase from two angles; first the
French :
Hors d’oeuvre meaus literally
‘without or outside work.” Now
n French the word oeuvre ("noun)
Pas about the same meanings as
he English noun work, especially
he meaning "that which is pro
iuced by physical or mental labor,”
is a work of art, a book, a statute,
i musical composition, a course

The "outside of ■work” meaning
>f hors d’oeuvre, then, comes from
;he fact that the appetizers and
•elishes called hors d'oeuvres are
rot a part of the meal proper; they
ire seDarate and not essential to
he meal. Originally, hors d’oeuvres

Now for the French pronuncla
ion. Hors Is pronounced: awr.
D’oeuvre and d'oeuvres are pro
nounced exactly alike (the “s” of
d’oeuvres is silent). There Is no
rowel sound In English exactly like
the sound of oeu-, but It, Is approx
imately midway between the "uh"
of "but” and the short "oo” of
"book.” Let us use "U” to represent
that sound. The second syllable Is a
soft, breathy "vruh” vanish. Hors
l'oeuvre and hors d’oeuvres are pro
nounced: awr DU-vruh.
Now for the American angle: “Are
ive correct In saying 'awr DERVZ ?”
With one exception, all the dic
tionaries of my library list only

(singular) Is pronounced "or derv.”
