Tf»l breast. 3 11M neck or shoulder 1 cups rat relerr j 3 tablespoons flour Cut salt pork in cubes and fry until brown, add veal breast, neck or shoul der, cut in 2-inch cubes, and brown well. Add water, salt, and cover closely. Let simmer 1 !i hours. Add cut celery and continue cooking 'i hour Thicken the gravy with flour stirred into a little water. Serve with cooked noodles. Garnish with pickle tans. Serves 5 or 6. SPICY VEAL POT ROAST Choose 5-lb. shoulder of veal, bone left in. Mix 1 tablespoon of dry mus tard, 1 teaspoon poultry seasoning, 1 tablespoon brown sugar, 1 table spoon salt and some pepper together and rub into the roast. Brown the roast very slowly in 3 toblespoons of lord—the more slowly browned, the better the flavor. Add 'l cup diced onion, 2 toblespoons vinegar and cover tightly. Simmer over a low fire for 2h hours. Mokes its own grovy. Serves 3 to the pound of meat.
