Try Some of These Apple Recipes By Violet Faulksei APPLES are good eating at any time, not merely for what they add to your diet but for the sheer enjoyment of bit ing into such a crisp, crunchy fruit.. Apple dishes are al ways popular. So when you’re hunting around for new ideas for the fall and winter season, try some of these recipes. Cinnamon Apple Cream One egg white, 2 /table spoons sugar, 1 egg yolk, 2 cups milk, 2 or 3 tablespoons sugar, Va teaspoon salt, 3 tablespoons quick - cooking tapioca, '2 teaspoon vanilla, cinnamon apples. Beat egg white until foamy through out, add 2 tablespoons sugar, 1 tablespoon at a time and continue beating with rotary beater until mixture will stand in soft peaks. Set aside. Mix egg yolk with abou *4 cup milk in saucepan. Add 2 or 3 tablespoons sugar, salt, tapioca and remaining milk. Place over medium heat. Cook until mixture comes to a boll, stirring constantly. This takes 5 to 8 minutes. Pour small amount of hot tapioca mixture gradually on beaten egg white, blending well. Then quickly add the remaining mixture, stirring constantly. (The hotter the tapioca and the faster it is blended in, the thicker and fluffier the pudding will be.) Add vanilla. Cool, stirring once after 15 to 20 minutes. Chill. Arrange pudding and apples in serving dishes, using 4 pieces apple per serving Makes five servings. Cinnamon Apples Combine 1 cup sugar, 1 cup water and Ya cup red cinna mon candles in saucepan. Simmer until candies are melted. Peel and quarter 5 small apples and add to cin namon sirup. Simmer gently 10 minutes, or until apples are tender, basting apples frequently with sirup. Remove apples from sirup and cool. Apple Brown Betty Two cups soft breadcrumbs, Ya cup sugar, l teaspoon cin namon, Ya cup margarine, melted; 4 cups apples, peeled, cored and sliced; 2 table spoons lemon juice, 6 table spoons apricot jam. Combine soft breadcrumbs, sugar, cin namon and melted margarine. Arrange alternate layers of bread and apple mixtures in a well-greased I‘2-quart casserole, beginning and ending with bread mix ture. Cover and bake in a 375-degree oven about 20 minutes. Uncover and bake about 30 minutes longer or until apples are tender. Serve hot with sour cream sauce. Sour Cream Sauce One cup sour cream, V « cup sugar, 1 teaspoon cinnamon, 1 teaspoon grated lemon rind. Blend ingredients and serve with Brown Betty. Baked Apples Six baking apples, 12 gra ham crackers, crushed; Ya cup brown sugar, 2 teaspoons cinnamon, 2 tablespoons lemon juice, Ya cup melted butter or margarine. Wash and core apples, remove about 1 inch of peel from stem end. Combine graham cracker crumbs, sugar, cinnamon, lemon juice and melted but ter; mix well. Fill centers of apples with mixture, pressing mixture down firmly. Place apples in a baking dish, cover bottom of dish with boiling water, cover dish. Bake in a 375-degree oven about 35 minutes or until apples are tender. Dish may be uncov ered last 10 minutes to brown. If LOOK- ITS A |l iou mu. uoc*.
