Branches bending under the weight of harvest. Scent of apples in the market place. Apples at the roadside stands, apples on pushcarts in polished pyramids. Apples in the kitchen. It’s the biggest apple crop since 1930. This year’s pick promisas well over the 100 million bushels totaled for 1956. Knives thin-shce the fruit for pies to make redolent of spice. And here’s some thing different Apple Pizza. Its base is a 16-inch circle of oatmeal pastry bed ded deep with grated cheese. The apple slices, rosy skin left on, are laid in spiral formation to top with brown sugar and cinnamon and so to bake. A finger dessert for late-evening refreshment. Appla Pizxa Fas try: 2 cups sifted flour / teaspoon salt 49 cup roiled oats, uncooked (quick or old-fashioned) % cup shortening 5 to 6 tablespoons cold water Sift together flour and salt; stir in oats. Cut in shortening until mixture resembles coarse crumbs. Add water gradually, mixing lightly with a fork until pastry will just hold together. On a lightly floured surface roll pastry to form a 16-inch circle. Cut around outside edge with pastry wheel. Place on large cooky sheet. Arrange filling ingredients. Filling . f 49 cups grated sharp cheese 5 unpared cooking apples, sliced 49 cup brown sugar 2 tablespoons flour 49 teaspoon cinnamon 44 cup batter or margarine Sprinkle grated cheese on pastry, leav ing I-inch rim uncovered. Overlap apple slices in two circles, having tips toward outer edge of pastry. Arrange more apple slices to fill in center. Combine sugar, flour and cinnamon; sprinkle over apples. Dot with butter.
