Governor Colquitt of Texas shows
a partiality for the southern concoc

The governor is a' "man of simple
taste as regards food. He eats plain
food, for the most part preferring
vegetables, and does
not eat much meat,
but is fond of chicken
breast. He eats very
little sweets, but likes
ambrosia made ac
cording to this re
cipe. One large cocoanut,
eight large oranges,
one large can
sliced, b u g a r to
sweeten according to
Grate the cocoanut, first removing
the outer peeling with a sharp knife.
Peel the oranges, removing as much
as possible of the white pit. Split
each section of orange lengthwise
and remove the pulp, breaking it as
little as possible; reject any seeds
there may be and all the tough inner
skinB, which are indigestible and
would make the ambrosia bitter.
Chop the pinapple to small bits with
scissors or a sharp knife.
Arrange the ingredients in a cut
glass bowl, using first a layer of co
coanut, then a layer of orange pulp,
then a layer of -pineapple. Sprinkle
sugar, continue the layers until all is
used, leaving a layer of cocoanut at
the top, then pour the orange juice
and then the syrup from the pine
apple over all.
Garnish with marischino cherries
and put in a cool place until ready
