; CAKES FOR CHRISTMAS
Quaint little wooden molds are re
quired for these cakes. An old'Ger
man recipe reads: One cup pow
dered sugar, rolled, sifted and
warmed. Four large eggs. One
pound flour dried and sifted three
times. Grated rind of 1 lemon. One
half teaspoon baking pqwder . sifted
with the flour.
Beat sugar and eggs 1 hour, stir
ring one -way. Add other ingredi
ents and shape into a loaf without
much handling. Set in cool place two
hours. Roll out a small piece of the
dough of an inch thick on floured
board. Put a little flour on a cheese
cloth bag and dust the springerli
molds. Press the dough into the
molds firmly, then remove and trim.
Spread a cloth on -a table in a xool
room, sprinkle it with anise seed and
lay. the takes on this for 12 hours.
Bake in lightly buttered pans in .a
Beat 3 eggs. Mix 2y cups flour
with one teaspoon each of soda, cin
namon, allspice, y teaspoon nut
meg, SA teaspoon cloves and y2 tea
spoon salt. Beat eggs and 2 cups
brown sugar together, add flour and
spices, roll out and shape into tiny
balls. 'Bake in moderate oven.
