This dish is a meat substitute. For
6 persons provide 8 pieces of. stale
bread, 1 egg, 1 cup of milk, pouna
cheese, teaspoon salt, a grain of
cayenne and 2 heaping tablespoons
butter. Beat the egg -well and add
of the milk. Dip the bread in this
mixture and let it stand on a plate
long enough for it to absorb all the
milk and egg. Butter a baking dish
and. lay the bread in it; then set
aside,. Cut the cheese into-bits, place.
In the upper part of the double boiler
and add the seasoning, butterand
rest of the milk. Meanwhile place the,
.dish of soaked bread in the oven: and
stir the'cheese -mixture until-thick
and very smooth; then pour over the
bread and return to theyoven to cook
for 5 minutes. Cover with a hot dish
and serve immediately.
Why do they label 'em "a bouncing
baby boy, or girl"? Is it on account
