When ready to eerve fill the glass up with sliced and sugared strawberries, heap whipped cream on top and decorate with a largo berry in center. StrawberrySponsjc. Put half a package" of gelatine to soak Tn half a cupful ot cold water. Mash a Quart of strawberries with half a cupful ot sugar. Boll one cupful ot water and half a cupful -of sugar gently for twenty minutes- Add the gelatine -to the hot syrup and stir until dissolved, and take Immedi ately from 'the fire. Then add the berries and place on cracked ice. As soon as chilled begin to beat, and continue until light and spongy, then add the whites of four eggs beaten to a. stilt froth. Pour Into a mold and set away to get firm. Strawberries and "Whipped Cream. Line a glass dish with ladyflngers. In the bottom of the dish place a layer ot strawberries. Add a layer of. powdered sugar, then a layer of dry, whipped cream, then another layer of berries, sugar and cream. Have the cream heaped roughly on the top and dot with berries.. Sprinkle with sugar and serve thoroughly chilled. Old-Fashloned Strawberry Shortcake. Put four cupfula of sifted flour Into a mixing bowl, add a half teaspoonful of salt and mix well. Chop in- threo large tablespoonfula ot butter. Dissolve a level teaspoonful of soda ln a little hot water and add with a well-beaten egg to a large cupful r? sour cream or rich, sour milk and a tablespoonful ot sugar. Mix well to gether with a spatula or flexible knife. Do nut handlo .more than necessary. The douKh should be soft enough to roll out easily. Roll lightly and quickly into two thin sheets. Bake In well-greased, round tins; lay one sheet drt the other, having the first one well brushed with softened butter. When done separate them. Cover the lower half with a thick layer of straw berries crushed and sugared. Place the sec ond shortcake on top ot berries and coer with whole berries, dun with powdered sugar .and serve with thick cream. Sweet milk and baking powder can be used in stead pf sour creain and soda. Frozen Strawberries With Whipped Cream. Put four tablespoonful Ot granulated sugar in a quart of water and boil for half an hour. To this add two quarts ot Ana ripe strawberries, and cook gently tor twenty minutes. Then set aside to cool.
