In the kitchen of her own home Sister Mary cook
daily fop a family of four adults. Shr brought to her
kitchen an understanding of tbe chemistry of cooking,
gained from study of domestic science in a state univer
sity. Consequently the advice she offers is a happy com
bination of theory and practice. Every recipe she gives
is her own, first tried out and served at her family table

Sometimes one hardly knows just what to do with a
fresh cake that is too big to go into the cake-box.
If a large crock is turned upside down over the whole
cake, the cake will keep perfectly for days".
The earthenware excludes all air from the cake and
keeps it moist and soft.
Menu for Tomorrow
Breakfast Blackberries, bacon in
cream sauce, coffee.
Luncheon Salmon sulad, bread and
butter, chocolate roll, tea.
Dinner Mock fillet mignon, French
fried potatoes, cauliflower in white
sauce, cucumber salad, fresh peach
pie, coitee.
My 'Own Recipes
It is always a good plan when bak
ing a fruit pie to mix the sugar and
flour. The pastry shell should be well
dredged with flour bef re the fruit is
put in. And the frui't should be thor
oughly mixed with the combined sugar
and flour.
Salmon Salad
14 cups salmon, canned or freshly
cooked.
12 square soda crackers.
12 small pickles (chopped).
M cup sugar.
1 tablespoon mustard
cup diced celery
4 hard-boiled eggs.
1 teaspoon salt
cup vinegar.
3 tablespoons butter.
Roll crackers. Mash yolks ol eggs
with mustard and salt. Add vinegar,

TINGALING PATCHES THINGS UP
Tingaling -was thinking fast. He was wondering how much of his con
versation Torty Turtle had heard, for he had been telling Nancy and Nick how
unbeautiful Torty was, not "knowing that it was Mr. Turtle himself they were
Bitting on, instead of an island as they had supposed.
It's pretty hard to make any one think you don't mean it when you say he
looks like a butter-bowl, has a neck like a bologna sausage, and a tail like a
string bean. And that, kind sirs, was exactly what the fairy landlord of the
Land-of-Dear-Knows-Where had said of his water tenant.
"As I was saying," said Tingaling looking down in a worried way at the
island, hoping to goodness it wouldn't disappear suddenly and give them all a
ducking, "as I was saying," he went on loudly, "is there anything handsomer

than a butter bowl? How I do adore butter bowls, turned upside down, espe
cially! I think I shall order six at once to put upon my mantle shelf! Beau

The island came up a little higher at that, as though it wished to hear

he cried. "Is there anything more delightful, my dears, than a dinner of
bologna sausage! And string beans! When I speak of them I have to cry al
most, I adore them so. Oh, to look like a string bean! To have a tail like a
string bean! It must be wonderful! So now, children, you see why Torty
Turtle would never do for the movies. He's much, much, too handsome.
The island moved some more and a head appeared above the water.
"Thank you, Mr. Tingaling." came Torty's own voice sweetly. "I thank
you so much. How much rent do I owe?"

mr in quite the wrong mood to hear
my husband's next remark:

making a smooth paste. Chop salmon
and whites of eggs. Mix all ingredients.
Add melted butter. Chill and serve on
lettuce.
Chocolate Roll
3 eggs
1 cup sugar
1 cup flour
1 teaspoon baking powder
6 tablespoons boiling water.
Filling
2 squares chocolate
-i cup sugar
2 cup water
1 teaspoon butter
IVj tablespoons cornstarch
cup milk
Beat whites of eggs till stiff.
Fold
in yolks of eggs well beaten,
sugar
boiling water, flour and baking pow
der. Bake in a hot oven ten minutes.
Turn out on sugar paper, spread with
chocolate filling and roll like jelly roll.
To make filling melt chocolate. Add
sugar and water, Stir until blended.
Add cornstarch mixed with milk. Stir
until it boils and thickens. Take from
fire and flavor with vanilla. Spread
ove sheet of cake. The filling should
be made before the cake as the cake
must be rolled while warm.

Bob spoke conclusively. "Come will

Before I could reply, the sound of a
woman's steps on the graveled walk
made us turn.
Mrs. Best was hurrying toward us.
"Bob!" she exclaimed, putting her
trembling hands on his shoulders.
"Bob! Tell me it isn't true!"
"You see! I was right! Katherine
did tell!" I said to Bob with quite a
triumphant "I-told-you-so" note in my
voice.
