THIRTY-FIRST YEAR (Section Two) hi r :l IANDSOMELY EOUPPED GRAND C PUBLI AFE WELCOMES C THIS MORNING Cafe de Luxe Officially Opens Doors for First Time Metropolitan Atmosphere, Elaborate Decorations and Luxurious surroundings Will Attract Many Patrons Cuisine and Service Par Excellence The Grand cafe, thoroughly modern, with all equipment up tc date and wearing a metropolitan air, will open its doors for the first time this morn ing. The newest addition to the cafes and restaurants of Phoenix is located at 34 West Adams street and is under the management of Milton Stamatis and Kanelos Stamatis. his brother. Everything possible has been done to make the Grand the leading place of its kind in Phoenix. The decorations ana furniture of the main dining room are elaborate in the extreme. The kitchen has been equipped with every sanitary device known, and in every case where it is possible, machinery has been in stalled to do the work of men. The Grand cafe will accommodate 250 people at one time. There are 1C booths in the main dining room down stairs and 50 tables for the accommo dation of guests. The special party room which has been placed over the back end of the main dining room will accommodate at least 50 people. This is an innovation in Phoenix and is only one of the many novelties brought out by the Stamatis brothers in the Grand. The furniture in the Grand is all of gum wood with a walnut finish. The booths, tables, chairs and woodwork of the entire main dining room have been furnished in that material, giving the place a tone of exceeding richness. The booths which line the sides Of the dining room will probably be anions the most popular places in the city. The benches which are placed in the booths in lieu of chairs are covered with heavy leather cushions, almost in sisting that they be occupied all the time. At the back end of the special party room are retiring rooms and a large linen closet. The rear end of the party room has been curtained off with heavy green hangings, while mirrors line the wall on two sides. In creating the kitchen of the Grand the Stamatis brothers believe they have left nothing undone to make it the most efficient place of its 'kind in the state. The electric dish washer which they have installed is probably the only one of its kind ever imported here. As dishes are brought from the dining room they are placed n a zinc lined table, from which they are placed on racks and then into the washer. They stay in there Beveral minutes. while being subjected to a stream 01 running water heated to a boiling point. This initial bath to which the dishes are subjected carries a mixture of soap. Following this process- a shower of hot water is dropped on them, thoroughly rinsing the soap off. The dishes come from the washer thor oughly sterilized and ready for drying. The center of the kitchen is occupied by a gigantic steam table. The base of the steam table is copper, while the dishes which are used are all of alu mintyn. The bottom part of the steam table is made up of compartments used for the purpose of keeping dishes hot. Special refrigerators have been con structed in the kitchen. They are all cooled by cold air piped in from a re frigerating plant. The largest refrig erator will be used for meats, while still another one is to be used for fish, and another one for salads and drinks. In addition to the huge range, a small charcoal range has been installed to be used for the broiling of steaks. In fact it has taken all of the three months during which the Grand has been under construction to create the kitchen in its present state of effi ciency. Milton Stamatis, the manager of the Grand, stated yesterday that the public is at all times welcome to inspect the kitchen of the cafe. In fact, they be lieve they have a kitchen which would be of interest to every housewife in the state, and that they can learn many lessons from the manner in which food will be handled there. A special salad pantry is one of the many features of the kitchen. The new Grand will employ 25 peo pie. It will be open from 6:30 in the mornin? until 1 o'clock the next morn ing. The prices, according to a state ment "made by Milton Stamatis, will be no higher than any other restaurant in town. One of the features about the Grand cafe which will appeal to every one in Phoenix, especially during the hot weather, is the changing of air in the rooms. Through the medium of large exhaust fans which have been installed the air in the Grand will be changed every :0 minutes. It has taken three months to create the Grand cafe. They nave Deen in me restaurant business for over 15 years and Wherever they have been they have marie a decided success. They believe that in creating the Grand they have given the people of Phoenix a restaurant of which they may well be proud. They spared neither time nor expense to the end that the best of everything might be installed. They have desired a place of beauty, and according to those who have visited the place they have succeeded. With the opening of the Grand this morning those who have not seen the restaurant are going to be pleasantly surprised. Several special dinner par ties have been arranged for this even ing and special music will be disrensed throughout the entire day. o ROWS XPERT ESIGHER OF GH DRAPERIES Inasmuch as first impressions are of paramount importance in conducting a first class cafe, the management of the Grand the latest edition to the first class cafes of Phoenix was espe cially ' anxious that the windows pre sent an inviting appearance. To this end they called into service the Bar rows Furniture company, which in turn placed their draperies .expert at the disposal of the Grand. From the large stock of draperies maintained by the Barrows company he found it a comparatively easy matter to equip the Grand as a place of its kind should be. The drapes in the wi'ndows of the Grand are of Glow Cloth with a Val ance overhead of blue and gold da mask. To heighten the effect of rich ness the windows have been hung with Austrian Puff Shades. The designing of the curtains and draperies is entirely the work of Mr. Gwillin. He has spent considerable time studying the problem of the prop er use of draperies and in placing the finishing touches on the windows of the Grands, he has created an effect which will lend distinction to both his efforts and to the Barrows Furniture company. Grand Cafe is going to take a chance and through the courtesy of W. F. Schnebly, distribute "free Rainier" on the opening day of the new cafe. Mr. Schnebly who Is the distributor for Rainier in this section of the coun try has seen to it that the thirsty pub lic will appease their wants at the Grand with Rainier in bottles and on draught. For the first day only the popular drink is to be served on draught, and free at that. No one is barred on account of age or previous condition of servitude. The only qual ification needed to get in on the free Rainier is to be a patron of the Grand the frst day It is opened, which hap pens to be today. portance to a cafe where it is the ever constant aim of the management to please the public. Two things must be taken into consideration according to a statement made by the manager yesterday. First the popularity of the product, and then a glance must be taken at the factory in which it is made. Both of these things were very carefully done by the management of the Grand Cafe. It did not take long for them to de cide that "Donofrio's cream was about as popular as it could be and then an inspection of the factory in which it ?s made thoroughly convinced them that it was impossible to conduct a mors sanitary place. At the start only brick ice cream will be served, but later it is planned to carry several varieties on the menu. In se lecting the products of the Donofrio factory, they are following their policy of only serving the best food stuffs ob tainable on the local market.
