Are we answered, "He- .carise it is too much exhausted to oeai me second crop of corn?"'' Why, then, will it bear wheat, oats, or barley? And, further, when two or three crops of other grains, plover or grasses, have been taken from the soili why do fanners frequently, without applying any manure, return again to the original crop, and go through a similar ro tation? Have fanners, generally, seriously asked themselves these questions, and then set about the attempt to solve them ? If there are any rational scientific princi ples involved in the rotation ol crops, V. must be the following: 1. One species of grain must extract from the soil some in gredients not required in equal proportions by another, and consequently may be fol lowed by a good crop of smother species when one of the same would be light. 2. Subsequent crops must accumulate, from at mosphere or subsoil, vegetable or mineral jnatter, which they leave in the roots or stubble to nourish a crop when it succeeds i aain in rotation 3. We are not aware that vegetable physiologists have determined, yet, whether the loots of plants have any power of selection of the special components of the plants, or any power of decomposing mineral compounds, so that those are merely hypotheses, not yet proven Jby 'decisive experiments, but without such a theory we can hardly see how we can realize a belter second crop of wheat af'.er A Fticcessioii of two or three crops of other grains, than is possible immediately follow ing the first crop. Where one of the crops in rotation is clover we can see how the fertility of t lie Koil may be improved thereby, enabling it to go through another rotation of the grains. Clover draws its sustenance largely from the atmosphere, and also, by means of long tap roots, from the subsoil, and as much of the product is left in the roots and stubble, it is not believed to exhaust the soil, but rather to increase its product capacity. The dam is a mule of Morocco, nine years old and 1.30 meters iu height, a well-made animal who has done ! good work as a bat mule, as the gall marks j 'hliow. Pour into a deep tin basin, previously buttered, and steam three hours, aner wuicn, oaKe one hour in a very moderate oven. The water should be boiling when it is put on to steam or else it is liable to adhere to the dish. Chicken Salad. 13il two common sized fow ls, and pick the meat into small pieces. Cut up half as much celery as you have chicken, and mix with the fowl. Add half as much pickle chopped tine, as you have celery, and set it aside. Now prepare the dressing as fo'lows : The yolks of nine hard boiled eggs rubbed into a smooth paste, one-quarter of a pint of olive oil, one pint of vinegar, a gill of mustard, half a teaspoon ful of Cayenne pepper, the same of black pepper, and a teaspoonl'ul of salt. Mix well into the prepared salad, and cut the whites of the eirjrs into small bits, and lay them 1 f. - I T 1 11 . over the top. This is one of the most de- lightful tea dishes ever made.
