In order to obtain lx>th these properties, Prof. Liebig di rects us to take two-thirds of the ground coffee nee led for the meal, put it to tie water and l*»il briskly a considerable time, and when the meal is nearly ready, take the coffee from the tire nivl add the remaining third of ground coffee; stir it well, let it stand a few minutes and servo. The above directions will not avail much if the coffee is not properly roast ed. lfoust often, and in small quanti ties at a time. According to M. Scliadler only half the quantity of finely ground coffee is needed, in order to produce the same of beverage obtained by the ordinary coarse-ground article. If, af ter Oriental fashion, the ground coffee is crushed line iu a 1110,' tar, only two fifths of the coarse is needed. Infu^on, boiling, or filtering through a bag, all have the same result us regards strength, except that by filtering the aroma of the coffee is letter preserved. Eit solid food at every meal, and when you take semi-liquid, or very soft food of any kind, eat very slowly and take a bite of hard bread, cracker, a green apple, or something similar with it. Then will your stomach please and be pleased, and your teeth, like your eyes and nose, and lingers and toes, will remain to b1033 and comfort you to the last. If all persons, after being weaned, would only chew their food enough, we should hear very little of aching and rotting teeth, and deiilists would be nowhere.— Science of Health. CHABOOAL FOB TUEKKYS.—A California paper highly recommends charcoal for fattening turkeys, and recommends khai it «hoaid bo pulverized and mixed with mashed potatoes and commeal, ns well as fed to them in small lumps. It mentions that in two lots of tin-keys of four each, treated alike, and one lot given this mixture and the other not, there was an average of gain in the weight of the first of one pound and a half each. AVhilo we condemn the practice of mixing the pulverized char coal with the other food of the turkeys, compelling them to eat it whether they want it or not, we liave no doubt of the excellent effects of supplying charcoal broken into small bits to turkeys, es pecially when fattening for the market. We have had evidence of what we say, and for a number of years have recom mended charcoal for this purpose. To KEEP BCTTEK SWEET. —It is the easiest thing in the world. Simply put it in clean jars and cover with a strong brine. This will keep pure butter a year, fresh and sweet, as we know by experience. It is equally good to put it in oak casks headed tight. This is equivalent to canning fruit. The brine in the case of the jar acts as heading, keeping the air out. Batter should be made well; wc have never experimented on poor butter. Work out the butter milk till you have only pure " beads," clear as spring water; "but do not work eo much as to break the grain, in which case you have a tough, heavy article in winter, and grease in summer. Such batter we advise no one to try to pre serve. • SWERR PICKLES. —TweIve pounds «f fruit, six pounds of sugar, and one quart of cider vinegar, cloves, and cin namon. Let the fruit boil in tbe above uutil soft; take out, put carefully in a dish, let the svrup boil down, then put on fruit again and boil a few minutes; jam and seal with tissue paper dipped in white of egg. CRSTABFE WITHOUT E KJH. —Boil, a quart of milk, exeapt a teacupful io which to put four table spoonsful of flour. When it boils put in a very little salt and stir the flour just as for starch. Add two tablespoonsful of sugar and such spice as you like. \INEOAK PlE. —One cup wigar; one half cup vinegar; boil together a few minutes. Cool and add one egg, one (spoonful of flour or a little rolled crack er, and one spoonful of butter. Bake with two crusts. METHODIST CAKE. —-One li«jf teacup of milk, one egg, about two cups of flour, one table qioonful butter, one cup- su jiar, one teaspouuful cream-of tartar, one-half teaspoonful sod*, and lemon to flavor.' LEAF IKPHESSIONS. —Taking leaf im pressions is a very pleasant amusement, especially for girls, and we subjoin the following method of the operation, which is said to be a good one although not new: Hold oil paper in the smoke of a lamp or of pitch until it becomes coated with the smoke; then take a perfect leaf hav ing a pretty outline; nnil sifter warming it with the hands, lay the leaf upon the smoked side of the paper, with the un der side down, press it evenly upon the paper that every part may come in con tact: go over it lightly with a rolling pin, then remove the leaf with care to a plain piece of white note paper and use the rolling pin again; you will then have a beautiful impression of the deli cate veins and outlines of tlie leaf. And this process is so simple that any per son, with a little practice to enable him to apply the right quantity of smoke to the oil paper and give the leaf the proper pressure, can prepare leaf im pressions such as a naturalist would be proud to posje ;s.
