Again, tho nutritive qualities of roots aro greatly augment ed, by their being subjected to the ac tion of high temperature in the process of boiling or steaming. Again, cooked food is moro highly relished, as a gen eral thing, than raw. This is shown by tho fact that potatoes nro often refused in their raw btalo by stock, but arc greedily eaten when cooked. If additional evidence were wanting, it would bo found in the farmer's own overy day experience. Why does he not oat his grain in an uncooked and unground state ? Why docB ho have his whent and corn ground, and baked, if these processes do not render them moro nutritious, wholesomo nnd pal ntoablo? In fact, many substances which in their natural state arc wholly unfitted for food being innutritions nnd indigestible, have chemical changes wrought in them by tho action of strong heat, which converts them into prolitablo purposes. Another advantage is the thorough mastication of the cooked food. This is not nlways possible with unprepared food, even with tho most vigorous and well matured animals ; but most es pecially in the case of very young or Tory old ones. With colts there is fre quently difficult dentition, proceeding from inflamed and ulcerated gums, which prompts the suffering creatures to swallow its food whole, and as a con sequence digestion is imperfectly per formed, and colic, diarrluea and other troublesome and dangerous diseases follow. A host of other substantial reasons might bo adduced, but enough has been said abovo to eonvinco every reflecting farmer, that it is tho part of wisdom nnd economy to present food lo stock in its most palatable and nu tritious form, and that tho surest and best way to accomplish this, is to cut, grind and steam it. The Uulturixt, A few Maxims for Farmers. 1. The farmer, who does not re turn to his fields a dressing more than an equivalent to tho crops gathered therefrom, is as unwitto and thought less as ho who would neglect to feed tho horso that was to carry him on a journey. In both cases diminishing tho ability of a faithful servant to min ister to his wants. 2. Tho husbandman who obtains from a field not properly mnnured, n small yield of grain, when by sufficient manuring ho might have obtained largo ono, is selling his labor at half its value. 3. in nil cases keep tho best products of your farm, whothor of grain or stock, for your own use, that improvements in each may result therefrom.
