A common variety of "country cider," from which "pure vinegar is produced, is made bj the lellow tag formula: To rath gallon of water add one-half pound of gran ulated sugar, acidulate with tartailc ncld and flavor with oil of apple, previouoly mlxed with alcohol; color with caramels, and to twent J gallons of the mixture add two gallons of actual apple cider. This so cahed juice of the fruit may be turned out rresh and sweet, or in the form of hard cider with the stinging quality, at a moment's notice, and from the same spigot, so skillful are the modern manufacturers. Now dissect the formula, as Prof. Hird did, and note results: Tie granulated sugar is a deception. In all probability, since a fair article tan be turned out by a liberal use of glucose, and this Ingreellentmay also bo or inferior grade; the water couU be impure, especially ir drawn from its source through a lead pipe; the oil of apple may not be above suspicion, the alee l.d prove to beof the methyl variety madefrotn wood, and the very caramels'be spurious or im pure.
