In the old days, and even today in the more remote country districts, the use of sugar was very restricted. A Chinese meal served according to strict standards opens with a number of cold dishes on the table, among which are candied and walnuts and sugar dates. Again, in the middle of the repast, there is served a dish of hot can died sweet potatoes or yams. To prepare this dish of sweetened [yams, the Chinese cook peels the yams and then cuts them in diag onal pieces, which are fried to light brown in lard and then drained One cup of water and one cup of cugar are cooked until it meets the fcard ball test. That is poured over |the yams and stirred until evenly eoated. Sweet potatoes are pre pared the same way.
