After making this discovery, I determined to submit to analvsis every baking powder I could lind in tfie market, and to expose such powders as wero adulterated, so that the public might be warned from purchas ing them in the future. 'Instead of these Baking Powders being composed alono of these constituents, which have been demonstrated to bo per fectly harmless and wholesome, the public have imposed upon them, powders largely adulterated with most injurious or hurtful compounds. Thcso injurious powders contain alum, and often terra alba (white earth) insoluble phosphate of lime, Ac,, tfce. Tho effect of alum when taken inter nally has been shown by WUmor and othore to produce dyspepsia, constipativo vomiting, gnping, and even inflammation of tho gastro euteno mucus membrane. Other great authorities, such as Carpen ter, Duredas. Thompson, Baron Leibig and others all agreo that the use of bread containing alum will bring about dyspep sia and other troubles. Dr. Motfc then publishes the analysis of several exten sively advertised Baking Powders, show ing that burnt alum is introduced into them, instead of cream of tartar.
