Iu the vuiley of the San Jose there are, as a fair estimate, one thousand Artesian wells, lie'iieved-to bo fed by lakos located in the Sierra Nevada Mountains, soini three hundred miles away. About oue-hulf of these wells arc flowing, tho "oi'.ier half are worked by windmill pump- The depth of sinking Artesian wells to secure flowing water varitiS in different sections of r.ouutry. In the valley before alluded to, from one hundred und fiity to two hundred and fifty feet is the usual distance. The plan adopted there in sinking a well, is to force down a tube, (avexii;:o di'ameU alsmt seven inches,) with ley ttHre', and remove t'iC dirt with an auger from the taiio at the'siiine fime. Two tubes or pipea are used, one tilling closely ' over tho other ond mo put together as to br. a:' joint. That these wells can bo nuccessfully put in op eration on the prairies we have not a doubt, and when once f eon red, their benefit would be ines tiniabU. The experiment has been tried in Chi cago and proved sueocssful. In last Monday's issue the Tribune iu speaking of tho wells in that eity says : "Tue first well sunk is 711 feet ia depth, and Hvo luehes diameter at the surface, contracting1 to four and otie-clhth inches at the bottom of the hore. The daily yield of the two wells is .. about NOf).O(K) g-allons. The ground upon which these twi)' wells is situated is thirty-two feet above t he level of Lake Michigan. In California, there are men who make it a bus iness to sink wells, and the usual price paid them is one dollar a foot exclusive of tho tubing. Many in tltat State prefer sot to go deep enough for a flow of water, but when the first water is reached at a depth of about seventy-five feet, aud which will rise to near tho surface, to attach a windmill pump, and with an elevated reservoir holdiug from two to three thousand gallons, keep a continual supply of water on. hand. It is a beautiful sight every afternoon when the wind blows regularly down the San JoM valley to see hundreds of these mill in operation raising wa ter to be used for irrigating purposes. In that State where rain never falls from the middle of Hay to the middle of November, aad vegetation dies daring the summer months, these wells an indispensable to the fruit grower and gardoaer, bat they are just as essential in Illinois aad the other Western States, for the stock raiser and farmer, and we hope to see them in successful operation here at no distant dar. All the above are only synonyms for one and the same substance, that of starch, the difference between them being mainly those occasioned by the differing proportions of the constituents and the presence of more or less foreign matters. Starch is a component of many articles of food, all the farinaceous vegetable containing a large proportion.
