vruite. Iu the vuiley of the San Jose there are,
as a fair estimate, one thousand Artesian wells,
lie'iieved-to bo fed by lakos located in the Sierra
Nevada Mountains, soini three hundred miles
away. About oue-hulf of these wells arc flowing,
tho "oi'.ier half are worked by windmill pump-
The depth of sinking Artesian wells to secure
flowing water varitiS in different sections of
r.ouutry. In the valley before alluded to, from
one hundred und fiity to two hundred and fifty
feet is the usual distance. The plan adopted
there in sinking a well, is to force down a tube,
(avexii;:o di'ameU alsmt seven inches,) with ley
ttHre', and remove t'iC dirt with an auger from
the taiio at the'siiine fime. Two tubes or pipea
are used, one tilling closely ' over tho other ond
mo put together as to br. a:' joint. These tubes
nre eonstrueiod of sheet iron, firmly riveted, nnd

nt many yoarj. Tiio cost of the wells vary
tr im two hundred to five hundred dollars.
That these wells can bo nuccessfully put in op
eration on the prairies we have not a doubt, and
when once f eon red, their benefit would be ines
tiniabU. The experiment has been tried in Chi
cago and proved sueocssful. In last Monday's
issue the Tribune iu speaking of tho wells in
that eity says :
"Tue first well sunk is 711 feet ia depth, and
Hvo luehes diameter at the surface, contracting1
to four and otie-clhth inches at the bottom of
the hore. It was eoiumenced in February, 18(!4,
an 1 ivnuileted in the fall of the same year. The
se.;iii I well is i!U feet it. depth, and five inches
in diameter all the way from the surface to the
bottom. The daily yield of the two wells is
.. about NOf).O(K) g-allons. The ground upon which
these twi)' wells is situated is thirty-two feet
above t he level of Lake Michigan. The water is
now discharged fifty-five feet above the surface,
or eighty-neven foet above the level 'of the lake
and can be carried still higher if required."
: Every farmer and stock raiser can,' with a lit
tle expenae have a stream of pure flowing water
upon their premises. The tools necessary for
boring purposes would not cost more than three
hundred dollars. Lot u township or neighbor
hood unite in the purchase of these and hire two
men to ue them.
We do not apprehend that it would be neces
sary iu this section to sink over three hundred
feet, to secure a flow of water. The two ineu
would be able, in any ordinary soil, to sink that
d istance in twenty days. In this way these well
could W put down at a comparative small outlay.
In California, there are men who make it a bus
iness to sink wells, and the usual price paid them
is one dollar a foot exclusive of tho tubing.
Many in tltat State prefer sot to go deep enough
for a flow of water, but when the first water is
reached at a depth of about seventy-five feet, aud
which will rise to near tho surface, to attach a
windmill pump, and with an elevated reservoir
holdiug from two to three thousand gallons, keep
a continual supply of water on. hand. It is a
beautiful sight every afternoon when the wind
blows regularly down the San JoM valley to see
hundreds of these mill in operation raising wa
ter to be used for irrigating purposes. In that
State where rain never falls from the middle of
Hay to the middle of November, aad vegetation
dies daring the summer months, these wells an
indispensable to the fruit grower and gardoaer,
bat they are just as essential in Illinois aad the
other Western States, for the stock raiser and
farmer, and we hope to see them in successful
operation here at no distant dar.
IVCM.
All the above are only synonyms for one and
the same substance, that of starch, the difference
between them being mainly those occasioned by
the differing proportions of the constituents and
the presence of more or less foreign matters.
Starch is a component of many articles of food,
all the farinaceous vegetable containing a large
proportion. That manufactured variety knBwn
as corn starch is prepared from the maize called
the "white flint" Before being ground, the corn
is soaked in vata. and then is run through the
stones with water. The mass is then filtered
and the residue Is dried in a kiln until all, or
most of the water is evaporated, when it is airain
ground to a dry powder.
Arrowroot is a terra loosely applied to the
starch extracted from a number of roots and co
real products, as tbe marsuta, m.mdio tacoa,
arum, potato, eto. That from the maranta of
the Last and U est Indies is the trua arrowroot,
but much of that in commerce is from other sub
staaoos. It is s simple very nutritious,
containing no nitrogen, and well adapted for prol
ducing adipose matter 1 r fat

Ike peeling is asually performed with the teeth;
itr that the root ia grated, the grater being a
weoden idab about three feet long, a foot wide,
aligbtlr hollowed, and set in diamond shaped
patterns with sharp pieces of quartz. The grated
pulp is then partially dried on a sieve aud placed
in a long eylindricai banket of elastic fibres.
One end of 'this Ueket is affiled to the limb of a
tree or a stout peg in the wall and a pole passed
through a loop on the lower end. One end of
the pore is rested under some projection and tbe
Indian woman seats herself on tho other end us
the power. Her weight draws the sides of the
basket together until it assumes the shape of au
inverted cone. The milky juice drops into a
vessel placed to receive it. The pulp is then re
moved and dried in a kiln or oven. This pulp is
known on mnuinRUi, and used for a bread. The
jHiisonous liquid deposits the starch known as the
tapioca of commerce. This deposit is dried eith
er in the eun or by rude kiln and granulates, as
is seen iu that so extensively used for puddings.
Sometimes it is denominated Brazilian arrowroot,
but under whatever name, it is the product of a
root which in it natural state is one of tho most
virulent of poison.
It is almost imp-ossihle to believe that ono of
tbe most nutritious and palatable of the elements
of our cuitint should bo derived from one of the
most fatal poisons known in the vegetable king
dom, yet such is the case.

Meri. Kditun : Every oua knows that he "sp"
which gives lif to the leaves is received through
'the "tap root" and that which bring the fruit to
perfection through tho "lateral roots" now, where
there is a vigorous growth of leaves and no fruit,
it is evident that thore is some defect in the fur
nishing quality of the lateral roots, the sap root
giving a superabundance of sap. This can bo
obviated thus: Let tbe farmer dig a trench
(commencing some six or eiht fect.mm the tree
iu order that the lateral roots may J.-orive no in
juries) deep enough to enable him to ttrike the
"tap root" some three or four inches from its
junction with the main portion of the tree. Cut
this with a saw or sharp knife, fill up the exca
vation and tho good elFectH will bo seen the fol
lowing season. This should lie done before the

seeds of grapes are frequently used in place of
the coffee lierry. When pressed, they yield a
quantity ot i;L and afterward when boiled, fur
nish a very economical, and it is said, a very del
icious substitute for the genuine Mocha.
