OTTAWA FRETE KADKU : SATURDAY FEBRUARY 12, 1870. t 3 jTarm (Darken pouscfjoiu. Chester lTMte II.. The Cheater Whit k not ia original breed of bogs, "t ia derived from croM of the best stock ia England with the Chinese or Siamese) bee;. From these two, the former Urge and somewhat coarse, the latter smaller and with fine points, a breed hss been obtained which grows to a good sue, fattens quickly and easily and mskea the best quality of pork at a very small cost. Several of these improved hogs were imported to Chester Co., Ta, over sixty years ago, since which time the stock hss been carefally bred by a number of our best farmers. The breed has been still further improved in this oountry by introducing a strsin of Suffolk blood, though it hss reduced the sue. This is doubtless sa improvement over the coarse and heavy hog, as grow by tome of our breeders iu this country, which does not mature early, and suffers great loss in waste and offal. A neat medium hog, weighing about 400 pounds, from 12 to 15 months old, is sufficiently large for farmers, end more profitable than tbs large coarse aize. The Chest White as bred in this vicinty is more profitable for the farmer, both for um and trade, than any other. It pro duce more pork on a given quantity of feed in a shorter time than any other breed. The Chi nese hog, from which, crossed with the English hog, the Chester White is obtained, ia the best for its size, and ia some other respects known. The flesh is exquisitely delicate, especially that of the suckinur pig, and it fattens rapidly and at little cost. Vet it yields se much fat that it fails to make the finest bacon. It is a little ten der, too, and does not thrive in the wextern lati tude!, where the weather is severe. For eross ing with other breeds it has proved very benefi cial sud useful, and the nearest approach to it in this country i the Prince Albert Suffolk, which is derived chiefly from the Chinese breed. The Utter, though they do not grow to great weight, fatten early and produce the sweetest quality of Bacon. The Chester White, as bred here, posscs-tca all the good qualities of the Prince Albert Suffolk, together with the large size required by the selection of animals of this stock for breeding. There is bad and in different stock among the bet breed, wnich should always be rejected, in order to pre serve and improve them. The following rules apply in tie selection of Cheater Whites, aad may bo used to advantage for other breeds as well. The Btrain from which the breeder se lects should be noted fwr fertility. In a breed ing how this quality is esaential, and is inheri ted. She should be a careful mother, with a sufficient number of dugs for a litter of twelve, never leas than ten. A young untried brood sow will display the instinct, which predomi nate in the breed to which she belongs. Both the boar aad sow should be sound and healthy, and iu fair but not very fat condition, to breed well. The Chester White is noted for it good sue and nealth, for fattening rapidly and early and fur good form. Form as applied to hogs, re late to the development of points which secure profit and ecouomy to the owner and breeder. These points in the Chester White denote the degree of purity of blood. The head should be of modiuta size, high at the forehead and short, with animated and lively eyes. The ears should be of medium size, thin, sharp and half drooping. The cheetks should be deep and full, the aeckdeep, and dishing grace fully from the back of the Lead, merging gradually into abroad breast. The shoulders should be set well apart at the collar bone, the body should be deep, round, well barrelled, with atnplo cheat, broad loins, and a straight, flat, broad back. The tail should be slender, the hams round, full and well developed ; the limbs fine-boned, with clean, small joints, ending iu good compact hoofs closely set together. If in perfect health the animal will be lively, anima ted, bold up its head sad move frsely. It ii then in good breeding oouliiiou. The britl-s Khould be fine and rather scanty, so as to allow tie skin to show through, which should be white and glossy. The color of the animal should be pure white, but occasionally a small black spot or two appears in some of the let specimens. This doubtless comes from the black Chinese breed, which was also crossed with the English hog in Bedfordshire, England, though the white was generally selected, in order to preserve the characteristics of the breed, but a fine hog ehould not be rejected because small black spots appear. Drit:' Firm Journal. Let Horses Have Theik Own Gait. It is Lad policy to move a team out of its natural gait, especially with a load. It is far better to put on a full load, and even a little more, and give the horses their own time for moving it to its place of destination, than to make two loads of it and hurry them. There is a certain degree of rapid ity of action peculiar to the muscles of each clas of animals, and indeed to each individual animal, and if they are pressed beyond this, fatigue fol lows quickly, while within this limit great en durance is witnessed. To test this, let a man attempt to move his arms as rapidly as a bird does its wings, or his legs in walking as rapidly as a little boy, and see how greatly he will be came exhausted. This will csnvince him ef the folly ef attempting to make hit heavy draft horses move with the rapidity of the pony or fast trot ter. The law of nature is that heavy bodies move slowly. Sorti Western Femur. If you wish to bake your bread or biscuit without a hard, dry crust, you can do so readily. Jut before placing the bread in the oven, rub its surface with butter or lard. This will close the pores, preventing the escape ef the gas which is produced by the yeast, and the escape of the steam which is produced by the moisture of the heated loaf. Bread thus baked will be almost c rustless. Indeed, so long as the moisture in confined it will be difGoult burning the loaf to any great depth, The largo vacuities in tho bread will be less nuratrous, though, as the whole, it will be more poroas and therefore lighter. Exchange. According to Dr. Dio Lewis, the habit of chewing tobacoe ii very easily got rid of. The first day a person would get along very well, and wonld hardly miss the stimulant The second day the mouth would be dry, the throat parched, the momory confused, and tho person wsuld hardly know what to do because of rest lessness and a Strang craving for something. Go then and take a good sweat, or, what is better, a Turkish bath. The third and fourth day do the same. By that time nil desire for tobacco would bo gone. To Remove Uikt Fkom tuk Eye. Take a hog's bristle, double so ns to form a loop. Lift tho eyelid and gently insert the loop up over the ball, whioh will cause no disagreeable feeling. Now cloho tho lid down upon the bristle, which may mow be withdaawn. The dirt will surely bo upon the bristle. TLo philosopher of "Poor ItuhnrdV' ulrunnao once wrote : "He who by tho plow would thrive, Himself mast either hold or drive." Tliew lines arc now rendered : . . "He who by his "biz" would rise, ; Must either bust or ud vortise." Sotnobody snjra that Ben. Butler Is tho "Titan'' of ths house.' Yutes is tho tight 'un of tho senate, Q.KIBLEX, BBISTOL aV PERKINS.
