Every year more and more thousands of homes change over to
Electric cooking because of the carefree joy it gives the home
makers and the now low cost brings it within easy reach of every
home.
The General Electric and Hotpoint ranges are now all equipped
with Hi-speed Calrod cooking units that are faster and use less cur
rent and are practically indestructible.
Intense cooking heat is at your command at the flip of the switch
and is accurately controlled automatically. Thus it is possible to
fill the oven, the thrift cooker or use the surface units, with the
steam tight lid kettles, switched to low and go about other tasks
until the AUTOMATIC REMINDER announces cooking time is up.

When baking an Angel Food Cake what do you do with the
12 egg yolks?
Here is a very good use for them if you have no other plan—
Beat the 12 egg yolks until thick and cream colored. Beat in ltfc cup
sugar thoroughly, running it in gradually just ahead of your electric
beater blade. While this is beating sift I*4 cup pastry flour, 3 tea
spoons baking powder, % teaspoon salt, 1 teaspoon flavor. Remove
dough from beater and fold in flour—add Vi cup of boiling water,
mix carefully. Bake at 350 for 50 minutes in tube pan or 35 minutes
in two 9 inch layer tins.
Orange icing will keep this cake fresh for tomorrow’s dinner if
you are serving your angel food cake today—and is make as follows —
Melt 2 tablespoons of butter, add grated rind of one orange, *4 cup
orange juice, 1 tablespoon lemon, % teaspoon salt and 3 cups powd
ered sugar. Blend until absolutely smooth.
Or cut the gold cake in half crosswise and spread with Velvet
Icing. Place top layer and spread the outside and top with 2 cups
whipped cream sweetened with 2 tablespoons powdered sugar and
flavoring.
Velvet Icing—Put 2 egg whites in large bowl of your electric
beater and cook 1 cup sugar, 1-3 cup water to soft ball stage. Pour
at once in fine stream into the egg whites which by now should be
stiff. Continue beating until cool and spread.
• • •
Request Recipe—Sultana Nut Frosting. Cook 2 cups brown
sugar, % cup heavy cream, cook until mixture forms soft ball when
tried in cold water. Turn onto large platter, beat until creamy,
using spatula of beater, add V\ cup seedless raisins cut fine and V\
cup English walnut meats broken and spread on cake.
