We hen r com - plaints from many parts of the country. Various expedients have been resorted td for " the pnrpose of stopping the spread of the dis- ease. One of oar readers recommends the vines to bo pulled up, leaving tho potatoes in the ground. To prevent them from ooming " up with the stalks, it is necessary to rest the loot on the hill. If some are rotten this ; method cuts of the connecting roots, and will save the remainder, lie ssyj he has tested ; this plan and found it successful. Others recommend the liberal application of pulver 1 i,;d lima an.l platter. For ourselves we be lieve no remedy can be found altogether effect- nal. The potato seems to have run out, and requires to be introduced anew from its native seats in South America. Take any kind of fine large puaches that are not too ripe, wipe off the down witli a sott flannel cloth, place three or four cloves in each, and lay them whole in a jar. To every gallon of vinegar add one quart ot water, live pounds ot sui;ar, table- spoonful of salt and whole cinnamon. Pour it over the fruit boiling hot, being careful that the vinegar covers them well, and li t them stand in a cool place a week or ten days ; then turn off the liquor and bjil as before ; sff'.er which they are ready t3 be set away in the store room for future ue. l'i?Arn Jullt may be made in the usual way. When very ripe, mash and strain through a jelly bag or eitve. Allow a pound of loaf rugar to a pint of juice, half-ounce of titter alrnong blanched aud pounded, or half of the kernels of tho stone. If it does not form readily, add isinglass. Peach Malmal&de. Mash to a fine pulp nnd add sugar in proportion to the sweet meats, nnd simmer down; it should be a smooth, thick mas. Put away in large tum blers, Peaches in Brandy. Wipe, weigh, and carefully select tho firmest fruit; a quarter of their weight in powdered loaf sugar, put the fruit in a vessel that closes tightly, throw the Bugar over nnd cover with brandy. Place a piece of double foolscap under the cover, and place the jar in a saucepan of water until the water is quite hot, but not boiling; when cold, tie the cover down tightly fo that no air can penetrate. Peach Wine. Take nearly ripe fruit, Stone it and bruifo it to a pulp, put eight pounds of the pulp to one quart of water, .and let it stand twenty-four hours ; then strain out the juice, and to every gallon add two pouuds of sugar. Turn into a cask, and when fermented and becomes perfectly clear, cork tightly in bottles. Peach Pie. Mellow juicy peaches, peel ed, whole, or in quart :rs, laid in a deep pie plate on each layer of peaches sprinkle a thick layer of sugar, a tablespoonfull of wa ter, and a light sprinkling of flour, and it will need no other seasoning. Cover with thick crust nnd bake an houi. Peach Dumplings. Should be steamed instead of stewing.as that would break them. Serve with common sauce, or lemon sauce, of one lemon cut fine, onu cup butter, and large cup sugar. Peaches fob Tea. Pare ripe peaches, cut them in quarters, sprinkle the rn with lay ers of sugar, and let them stand an hour to extract the juice. Then cover with rich, sweet cream, and there is nothing better. Peaches a la Strawdeiirt. Ripe peach es cut in small pieces, wiib soft, mild eating apples, in the proportion of three peaches to one apple, mixed with sugar, and Kit to stand for two or three hours, make excellent mock strawberries. Pa., cut in ten consecutive hours ten acres of wheat in a thoroughly workmanlike manner. It turned out two hundred and fifty two shocks, or three thousand and twtn-ty-ftur sheaves being nearly three hundied and three sheaves per hour, and over five per minute during the whole time of cutting. This is, perhaps, the most extiaordinary cradling ever donn in the country. At the olose of the performance, Mr. Cramtrdid not appear to he much fatigued, nnd expressed his ability and readings to undertake the muting of an adjoining lot of seven acres on the following day. Vineuak. The jaice of one bushel of su gar beets, worth tweuty-five cents, and which any farmer can raise with little cost, will make from five to six gallons of vinegar equal to the best elder wine. First wash and grate the beets, nnd express the juice in a eheese press, or in any way which a little ingenuity can suggest, and put the liquor in to a barrel, cover the bung with g ause and set iu the bun, nnd in fifteen or twenty days it will bu tit for use. liy this method the very best of vinegar may be obtained with out a ly great trouble, and I hope nil who Jiko good vinegar vill try it.
