S O A 1 I O W TO The London Milk Journal gives aevaral eurious prooesses for preaerv ing butter. They may not always be of the highest praetioal utility, still they afford more or less useful hints, nad we present aeveral of these meth oda, not ealy to ahow our readers what baa been done in this direction, but to enll the attention of experimenters and io venture to braaoh of dairy eeonemov quite too mooh neglected. During the past ten years there has been gient im- provement made in the manufacture ot butter, and muob interest ia felt by dairymen in obtaining information eonaerning she beat practice, from the setting of the milk to the salting and working or the butter and here the matter haa not unfrequently rested. What ia needed now perhaps as mucb aa anything eeanaeted with butter mak ing, is a knowledge of the beat plan et bitter preservation. The loss, from iguoranoe or want of attention on this one point, ia enormous, and it seems as tonishing that people should take so much paina to manfaeture a good ar ticle, and then allow it to ran the chan ces of epoffint by being iopcrfeetiy packed, or put np poorly for market. We need to knew much more than we do about the proper preservation of many kinds of food, but especially of batter, whioh so eeasily deteriorates from a luxury into a state intolerable for human food. We most regard, there- fore, any attempt at the better preser vation of thia food as'praiseworthy, and we think the Milk Journal ia doing important service to manufacturer and consumer in openiag up this most neg lected branch of dairy. We condense the account of the several preserving processes, Riving simply the main feat ures of each. Dandrant't Method consists in roll ing the butter in sn envelope of thin vegetable paper, or tissue of some kind. The package is then plunged into a bath of liquid resin, and it it ia found necessary to form a thicker ornst of gum or resin, it is subjeotsd to a sec- ond immersion. In Girard't Method the butter re quires to be washed, so as to extract from it all the milky particles, and when this is satisfactorily done, the butter is spread oat and quantity of brandy or alcohol is poured over it. It ia then kneaded together or worked up so ss to effectually mix the two sutu stances together. It is now made up into ball*, and these are wrapped in pa- per which has been previously steeped in brandy or alcoholie spirit. This is afterwards folded, in another paper which will exclude the air as mucb ss rosajbla. For long sea voyages these package*, are recommended to be pack- ed in air-tight packages. Leim't Proceu is first to beat up the butter between two linen cloths within three data alter it is churned, in order to remove the whey or other matter which might cause rankness of flavor. The butter ia now enveloped in paper prepared for the purpose by being coated with albumen made from the white of eggs. For every egg whose white is beaten up, about fifteen and a half grains of chloride of sodium and half that quantity of salt of niter is dissolved in this albumen, but the ni- ter need not be used except th butter abowa signs of rancidity. The paper, however, ia not to be considered ready aatil it has been before and after its preparatioa subjected to a great heat by mesne of hot smoothing iron or some other contrivance. For long pres- ervation, the rolls are to be kept in a dry place,especially if the Weather is bet. Redwood*$ Proceu Consists chiefly in eovoring the butter with psrafine. The brine does not en- ter, into the substance of the batter or render il in any way disagreeable. In. the preparation ot brine for butter, we find it best to heat the brine scalding hot, skimming it snd then allowing it to cool and settle, pouring off the clear, ©old brine, whioh ia then fit ftr use. Sugar and Saltpetre—These sub stances are regarded by many old sod experienced ba^gr, makers as import ant aids in the preservation of butter. In one town among the butter lactone- bt Orange Co., N. Y., the account «,, Which wss given in the last yesr's Rw tot JVrte Yorker, we referred particu larly to these preservatives, naming the proportion to be used as thought beat by Orange Co. dairymen. We now present the Milk JournaVt formula. To ten oaneea of-fine salt add two ounces of best brown sugar. The dif ferent ingredients are to be evenly mingled together and an ounce ot this mixture used toe every pound weight ot btttter.aqd well worked in, Potter if*loscly packed and .kept & well ventilated plsee,!-it is faid will keep sound for several years. Anotktr J?u/e—-la to mix one ounee of a finely powdered white augar with one ounce saltpetre aod two ouneea large-grained Cheshire salt, and after incorporation: them well together one ounce of the compound ia used to every pound of butter. The mixture must be well worked into the butter, whioh ia then closely paoked into olean earth «D crooks or jars. These are then set asidt) aod kept, in a very cool p'soe, and the butter, it ia asserted, will re- main io good condition for years, and haa borne a voyage to the East Indies and atill been serviceable. Butter thua packed, it ia recommended, ahonld stand untouched for two or three weeks after being paoked, or it will taste rather unpalatable, but after that time it ia aaid to acquire a fine marrowy flavor. The Drench Method—In to take one part augar, one part niter, end two parts salt and reduce them by grind ing to a fine powder. Two ouneea ef thia mixture ia knaadei into about two nod a quarter pounds of butter. Restoring 'Rancid Butter.—Rsn oidity is caused by the presence ot butyrio-aoid, and auoh butter ia well washed with good new milk, in whioh substance the soid is freely soluble. After this trcatmeot it is to be washed with cold spring water. Another Plan—Is to best up a quar ter of a pound of good, fresh lime, in a pail of water, and after allowing it to stand for an hour, until tho impuritiee have settled from off the clear por tion, wash the rancid butter in that. It makes a very nice cake. LEMON PIE,—Grate the rind ot two lemons, adding juice and pulp. Take six eggs, beating whites and y,olke sep arate. Two oops white augar, three tablespoons melted butter,.
