Vegetables and Salads Make
Safest Dishes for Summer

With the first hot days of earl;
summer it is time to change our diet tc
Bummer quality as well as our clothes
Vegetables, salads and fruits now
form the bulk of our meals.
To keep in the beat of physical trim
It is wise to have at least one sub
etantial dish, even though only f.
"heavy" salad, and one hot dish 01
beverage at each meal. Meats ma:
be eliminated almost entirely, foi
both economy and health, and fruit!
and light puddings form most of th«
desserts.
Summer Is the best possible season
to conserve wheat, fats and sugar bj
substituting the garden products.
Now is the time to use corn breads
as the meal does not keep so well later
on and the space is needed to store the
new crop.
Serve a corn bread at least once a
day, and oftene^· if possible.
SUNDAY
Breakfast: Strawberries, sweet po
tato popovers, green peas omelet, cof
fee. (Wheatless. )
Dinner: Cream of asparagus soup,
broiled chicken, new potatoes, peas,
beat and cottage checBe salad, corn
crackers, apricot ice, coffee. (Wheat
less.)
Supper: Potato salad, brown bread
lettuce sandwiches, honey c/ookies,
iced tea. (Wheatless.)
MONDAY
Breakfast: Fresh rhubarb and cur
rant sauce, corn griddle cakes, eggs,
coffee. (Wheatless.)
Lunch: Creamed peas and carrots,
rice muffins, strawberries. (Wheat
less.)
Dinner: Tomato soup, chicken and
rice croquettes (leftover), buttered
beets, lettuce and onion salad, French
dressing, cheese, coffee. (Breadless. )
TUESDAY
Breakfast: Stewed apricots, potato
omelet, rye muffins, coffee. ( Wheat

prunes with cheese stuffing, fresh
