WISE MEAT BUYING

'•Good morning, madam," said the
butcher in the neighborhood store—
"What will you have this -".orning—
chuck, Clank, or rump?"
This customer was fast becoming
well known In her neighborhood for
"the delicious dishes she prepared
from the leas expensive cuts of moat.,
and her special pride in her reputation
was the fact that her knowledge of
these dishes was just recently ac
quired.
As the main dish for dinner, notl*
ins can quite replace a hearty dish of
well prepared meat. The demand hae
been created for the more tender
meats, which anyone can cook, such
*3 as chops, steaks and rib roasts. It
requires real skill to cook the tougher
cuts, such as shank, neck, flank and
'plate. The food, value of the latter
is as high as, and often higher than.
the food value of the more tender
.v cuts.
What could be more juicy and well
flavored than the steak cut from the
top of tile round from a well hung
prime beef? This may be a treat
for a special dinner. Whon this cut is
properly cooked, it is tpnder, of deli
cious flavor, and high in nutritive
value. It is also without waste.

boiling water. Watch the meat care
fully for ten minutes, then be sure
to reduce the heat, add seasonings,
and allow to cook slowly until tender..
