On one occasion, at 4:80 p. m., he called at tbe offloe "Charley," said be, "I want a tip top stand-up lunoh, witb flowers and all that sort of thing, served in the Erie building-, for 150 men at 8:80 " "That's two hours from now." "Well, a great deal oan be done in two hours " "All right, Colonel, I'll do it, but it will be an expensive job for you." "Whesaid anything about tbe ooat? You do it and I'll pay for It" Of oonrse the lunch was served, and equally of course tbe $1500-blll waa paid. At another time, wheu Fiek was working up tbe Ninth .Regiment, a bail was given at tbe Academy, aud Fisk was uozious tbat Del raonioo sbould furnish the supper. Tbey declined on tbe ground tbat tbere waa no profit in it. "How much guaranty do you want?" said Jim. . "A thousand dollars," said Delmonico. "All right," said Fisk, "I'll take five hundred supper tickets;" and he did. The ring potentates never favor ed Delmonico's uptown bouse much, but spent thousands of dol lars in tbe Chambers street plaoe. Peter B. Sweeny used to golbere wben be wished to be quiet and by himself. The last time be called be nearly completed a bargain witb Delmonioo by which tbe latter was to take Peter's Thirty-fourth street property for a restaurant. Wben Tweed's daughter was to be married, the old man oalled on Delmonioo two months io advance •nd, without mentioning terms, simply said: "I want a supper, good one, for my daughter's wed ding; 500 people. Good day." The day after the supper was Served be called and paid for it. "Do you keep your people a long time?" Mr. Delmonico was once asked. "Some of tbem." "Tbe cooks—bow about tbem?" "Well, I pay the present bead cook $4,000 year; his predecessor $8,000. Tbe other cooks get from $15 to $80 a week." "What do you give the head waiter?" "Fifteen hundred dollars and his board and lodging. Tbe table wait ers get $30* mouth, and average $60 in fees. I wanted to transfer one of tbem from the saloon to tbe bar, raising from $80 to $80, but he wouldn't go because be made $90 where be was." Los Angeles Wholesale Markets.
