During an early ram'-le among the uptown hotels a reporter LapiiKi to have Lis atten tion attract! by a no1 ley crowd of women and children with baskets on their arms and buckets in tht-ir hands standing at the side entrance leading into the sculleries of a prom inent hotel in the neighborhood of Madison square, and waiting patiently for the door to open. Prsently a man in white apron and cap allowed the crowd to file in, and alter a littis while they camo out again with their baskets filled wkh all manner of victuals jumbled together in confusion. "There are a great many people who get their provender at the back doors of the principal hotels," was the reply of the hotel steward in answer to a query from the re porter about the meaning of the scene. "If you go to any of the hotels, say about S o'clock in the morning, you will see a little gToup of people with baskets on their arms waiting for broken victuals. Stewards gen erally charge twenty cents a basket for this sort of food, which otherwise would go into the garbage barrel. Of course, fastidious people might turn up their noses at this sort of food, but it is mighty good eating." Fully one-half of the guests who sit down at the dinner table in a fashionable hotel or restaurant do not eat all they order. The bill of fare may look so inviting that thej will call for a great 'ariety of dishes. When they are served they may take a nibble at this and a bite at that, but that is all. Then as the tables are cleared all of these good .remnants are sav.l for the purpose stated. Another hotel steward who was spoken to on this subject assured the reporter that he had among his customers som3 people who are by no means in needy circumstances, and yet they send some of the family regularly around for broken victuals. These people might be very properly called imjecunious epicures, for they want all of the good things of the table, but unfortunately are not able to pay for them first hand There is a discrimination in the matter of Lroken victuals, too. The choicest bits from the table in the way of meats, pastry, pies and such fruit as may have reen handled aie collected together, and they bring higher prices than the damaged sort cf edibles. Besides disposing of the stuff for a money consideration a deal of good is done in a quiet way. Scarcely a day passes but what two of the "Little Sisters of the Poor" call in their wagon at the different hotels for broken vic tuals, which are given to thern without charge, and they distribute them among needy families.
