Cut Home slice of bread moder atelv thick, without the crast : butter, and cover tha bottom ol a Outtered uiru wun mem . spread a pound ot currants, ruin tus or stewed apples over me slices, stew some brown sncar over it t put another layer of bread and fruit, etc., with a lay erof bread for the top, then pour over the whole 4 etcp mix ed with ft pint of milk ; bake ODe hour ; grate nutmeg over it when done. Serve warm. Rice Fuddiug. Boil a coflee cup of rice. In a quart ot milk, and a little salt until the milk is entirely absorbed then stir in the crated rind and luice or one lemon, 4 large spoonfuls of white sugar : 2 tatilespoonfuls or but ter, the yolks of 4 eggs. Bake iu a buttered dish threv-qturtcrs of an hour, then beat the whites ot 4 eccs with sugar to a stiff froth spread over the top and bake a light brown. Pie Crust. Mix 13 of pound ofbntterwitb 112 poanda of sifted Moor, nsing enough ice water to moisten it, roll it oat into a thin sheet, always rolling from yon quickly and lighlly. Cut 2-3 of pound of butter into strips, aud wben the putte is thin enough, take 13 of them and Inv in close rows npon the sheets; dredge with flour', roll np the paste into close folks as you would a sheet of music. Flatten it and roll out as before, adding auolher third of the bits of but ter, do this three times. Finally cut off from the end of the roll a, piece large etiocch to cover a pie plate and rollout quickly; butler your pie-plates and flit the paste neatly in them ; gather np the scraps aud use in next sheet. Bake until a light brown. When time can be spared it improves the pie eras., after oil the but ter has been nsed, lay the roll on ice for a quarter of an hour.
