method. Only one bowl is
needed to blend this super
fine cake flour with all the
other ingredients—all in I
nutter of minutes.
Brown Sugar Red Devil’s Food Cake
2 cups Swans Down cake flour 1-1/8 cups milk
1-1/4 teaspoons soda 2 eggs, unbeaten
1 teaspoon salt 8 squares unsweetened
1/2 cup butter (at room temperature) chocolate, melted
1-1/3 cups firmly packed brown sugar 1 teaspoon vanilla
1. Measure sifted flour, soda, and salt into sitter.
2. Place butter in mixing bowl; stir just to soften. Sift in dry in
gredients; add brown sugar. Add 3/4 of the milk and mix until
our is dampened. Then beat 2 minutes at a low speed of electric
mixer, or 300 vigorous strokes by hand.
8. Add eggs, chocolate, vanilla, and remaining milk. Beat 1 min
ute longer in mixer, or 150 strokes by hand.
Baking. Pour batter into two round 9-inch layer pans, which have
been lined on bottoms with paper. Bake in moderate oven (860'F.)
about 30 minutes. Cool.
Prepare your favorite fluffy frosting and spread generously be
tween layers and over top and alde- of cake. I! desired. sprinkle
with grated chocolate.
