The Bailey Building Emerges From
Onslaught By Artisans As a
Thing of Beauty
Something of a miracle has been
wrought in the Bailey building at the
intersection of Main street and Ave
nue A The building has been prac
tically rebuilt and is now one of the
handsomest store rooms in Palestine
It is to be occupied by the Dobbs Fur
niture company and the stock will
begin moving in Monday perhaps
Mr IJ C Bailey the proprietor of
this building should be at least voted
a card of hanks if not rewarded with
a medal in converting an old barn
into a very handsome and attractive
building It is a wonderful impiove

Is the Advice of Dr Harvey W Wiley
Chief of the United States Bu
reau of Chemistry
Dont turn foodcrank because the
things you Jike have risen in price
Dont boycott meat because steaks
aie expensive It you do you may
get sick because your teeth and your
digestive apparatus were built for a
mixed diet Eat more canned goods
they are cheaper than ever before If
combinations continue to control the
prices of food products the govern
ment may be obliged to enact anti
highprofit laws similar to those aim
ed against usury Dr Harvey W
Wiley Chief of the Bureau of Chem

Washington D C Feb 24 Dr
Wileys advisevto the housekeeper in
the present financial crisis brought
about in the family purse by the high
cost of living iis to abstain from worry
and buy everything she has been buy
ing only not so much of it
A ten cent soup bone will flavor
half a bushel of potatoes said Dr
Wiley and will if cooked right taste
just as good as a dollar steak With
the addition of an onion a carrot and
a sprig of parsley that soup bone can
be made to produce enough good
nourishing soup for a big family
Then after the soup is made save a
little of thefluid and boil it down in
the kettle with the meat Then youll
have a pot roast which if made right
will be fit to set before the presi
dent
Canned goods of all kinds are
cheaper than ever before inour his
tory Beans and peas have not risen
appreciably in price and make the
best food for man Wheat flour at
the price it is now selling is lie
cheapest food that can be bought and
corn meal hasnt changed in price for
the last tenyears
If the American cook would study
the methods of the French cook who
uses up all of the loft overs you
would not hear so much about the in
creased cost of living The average

Amei ican cook throws away or wastes
enough to keep the ordinary French
familytgoing Over there they save
every scrap of fat and every crumb of
bread and convert them into appetiz
ing dishes They know how to make
the most out of the cheaper cuts of
meat Over here the average cook
turns up his or her nose at the coarser
grades of meat and thinks that noth
ing is fit to eat unless it comes from
the neighborhood of the tenderloin
Of course a great deal of the ad
ded cost in the price of meat pro
ducts has come about as a result of
combinations of dealers The farmer
is not getting much more for his cat
tle than he did ton or fifteen yeais
ago The government or the stafe
will have to step in one of these days
if those combinations continue to in
crease the prices and enact laws pro
hibiting dealers fiom making more
than a certain amount of profit
