Louis Forest, founder of the famous Club des Cent —the Hundred Club—whose object is to keep alive the best traditions of the French cuisine, entertained the members of the American C*ub of Paris recently with a talk on “The Intellectual Value of the French Cui sine.” The speaker likened the art ol the cuisine to music, declaring that it took as long to form a good cook as it did to make a good mu sician, and pointing out that in more senses than one real art was a Ques tion of exquisite taste. The finer appreciation of the good things that grace the table, he declared, was an essential training to the finer appre ciation of all other arts. If France could putly be proud of her reputation for cooking, M. For est was not without some fear for the future, declaring that more has ty living and more hasty meals led to less discernment in cooking. French cuisine, said the speaker, was made what it is, nit in the pal ace and the home of the rich, but in the farms of the wealthy land owners of the provinces, where ev ery dish as it came on the table was the subject of discussion and the wine a matter for conjecture, com parison and reminiscence.
