And large or small, raw or cooked, carrots are rich in the carotene from which the body makes vitamin A. 7 J A Most green plants retain their carotene in their leaves—where its yellow pigment is hidden by the green of the chlorophyll. But some plants transfer part of their carotene to their roots, and so become yellow vegetables Hence the decorative golden color of the carrot. To add crisp texture to a meal; serve raw grated carrots or slen-l der carrot strips cut lengthwise, say home economists of the U. S. Department of Agriculture. For salad bowl contrast, combine raw carrots with shredded cabbage or chopped celery, onion, or green pepper. Cooked carrots may be season ed with good-flavored meat or poultry drippings. The vitamin A value of carrots is not afletced by cooking. But to make the most of the flavor and other food val ues, home economists suggest these rules for boiling: Boil young tender carrots in their skins If carrots are peeled at all, make scrapings no more than skin deep. Start the carrots off in already boiling salted water. For young ‘carrots use just enough water to mover. Keep the kettle covered. This :speeds cooking and saves flavor 3and food values. I Cook only until tender. Eggs for Flour ‘ Eggs, now in seasonal abund ance, may be used in various ways in cooking to spare flour. Wher ever egg is used, it adds color and richness as well as mineral and protein value to the dish. The fol lowing are possible ways to use egg in place of flour In Soup: Instead of the maca- I‘ roni, spaghetti or rice, usually served in thin soup to give it some “substance” take a tip from Chi nese cooks and use eg strands. Just before the saup is ready to serve and while it is still simmer ing, pour in beaten egg gradually. The egg cooks in attractive yel low strands immediately on com ing in contact with the hot soup. Serve at once. . For Thickening: Any cook who} has ever made custard knows the‘ thickening ability of the egg. Egg‘ may be used also to thicken some; gravies and sauces in which flour‘ is ordinarily used. Two precau tions must be taken, however, to prevent egg from curdling rather than thickening. The first is to cook at low heat—simmering tem peratures preferred. The second is to pour a little of the hot mixture into the beaten egg first, and then add this mixure o the rest of the hot liquid - . For example, a clear,“ slightly thick gravy for chicken stew may be made by adding a little of the hot chicken broth to well-beaten egg and then stirring the mixture into the remainder of the broth. Never hold the gravy over direct heat after egg is added. An unsweetened soft custard— ;milk thickened with egg and sea ;soned with salt, and possibly also lwith grated onion, cheese or herbs -—makes an appetizing sauce for ifresh vegetables in place of white sauce. Even in white sauce, egg ‘may be used to spare part of the flour. Make a thin sauce, then add a small quantity of the hot sauce to beaten egg, and stir the mixture into the rest of he sauce. Heat a few minutes in the double boiler over simmering water before ser ving. Still another place where eg may be used to thicken sauce is in “boiled” salad dressing, popular these days because it uses less fat or oil than some other dressings.
