ESPECIALLY FOR THE LADIES. A delicious pudding. —A plain but de licious tapioca pudding c very little else but tapioca and apples. Most recipes say soak very nice at all. Put your tapioca over in cold water and boil till it is clear, like starch; while that is boiliug you pi pies- The number of apples and quanity of id must he according to the num ber to he *ed. It is hard to spoil the pud ding, it is so simple. Put the apples into another dish, and cover it with water, ad ding a little sugar and nutmeg or cinnamon; boil till nearly soft,and then turn the cleau tapioca over them, and bako a little while; do not forget to put salt in your pudding, you will have a very tasteless affair. It is to be eaten with sugar and butter. Cream is most excellent if you have it. be made with night, but a can be made without soaking and core a few ap tapi.*,' Baked fihu.—T ake a nice fish, boil it, move the bones and ohop considerable pars ley very fine, with about as much crumbs as fish. Take a pud ding dish and butter it, then lay a layer of •bread crumbs, then a layer of fish, ending with the bread crumbs. Mix your parsley and onion with salt and pepper through your bread crumbs. Put lumps of butter over the top, small onion. Have •y slight greating of nutmeg, and ir it all sweet cream, ■y rloh pour milk, till it rises nearly to the top. Bake i m till it has a nice, rich hr a quick orust. Monday's pudding.—T he remains of cold plum pudding, brandy, custard made with five eggs to every pint of milk. Cut the re of a good cold plum pudding it ak them in a little brandy, and lay them cross barred in a mould untill full. .
