Housewives Should Know Grades Of Beef To Purchase Properly "TTAYE 7u ever -wondered Jaat why XBirlion steaks conM be purchased from one market for 30 ents. wh ile another dealer charged W cents for the same cat on that same day" asked Thomas A. Bray, chief .nspector of the United States bureau of animal industry in El Paso ' Or why the rump roast you ordered last week was Juicy and tender while the one you ordered yes terday was tough and stringy, al trough you paid the same price per pound and purchased them from the same dealer? "The fact that slrllon steaks can be purchased at such variable prices on the same day does not necessarily mean that one dealer Is underselling the other on the same article. The first may be a sirlion cut from a cow or steer of common grade, while the latter Is from a top grade animal. The two roasts no doubt varied just as widely in grade. "As a rule a dealer habitually carries the grade of meat that is best suited to his class of customers. However, when a dealer carries more than one grade of meat be usually sells the same cuts from all grades at the same price. Public Should Jrn Grades. "TTntii thn nubile learna that (Trade as well as cut determines th quality of beef and should also determine tie price, cuts of low grade will be re tailed at the same price that similar cuts of crood or choice grade com mand, although the difference in vhfllei8 nrice is sometimes as much as 7 or 8 cents a pound between Puzzle Pictures By WALTBH WELLHAfl. f .rxYM XtwW NNC- ' . w-- c ir-fc-4?fc tf -.Mt3- V v PROVERB TIUAACLE.
