While farmers, a a rale, bare fed their poultry the grain that was cheap est on the farm, many poultry spe cialists and most small poultry keep ers have been accustomed to use their favorite poultry feeds without consid ering either the quality of the sup ply or the possibilities of using cheap er substitute. Under normal conditions, corn In nearly all parts of the United States Is the cheapest poultry feed. At the present time, oats are nearly every where cheaper than corn. When corn goes down to $1.50 a bushel, oats should be 75 cents and barley $120 n bushel to give the same value for the money fed to poultry, as corn. The common characters and condi tions Of grain which roughly determine their values as poultry feeds are eas ily estimated by the eye, or by weight or balk la neuor or container of known capacity. Good cracked corn Is hard, bright, clean, free from soft and chaffy par ticle. Corn that Is crushed (not cracked), and shows much soft, chaffy and scaly matter, should be rated pro portionately below good cracked corn In feeding value. Cracked corn In which any considerable amount of greenish discoloration appears should be rejected as unlit for poultry. Oat with the hulls on are at once seen to contain more Indigestible mat ter than corn and wheat. Again, the Indigestible hulls covering oats make that grain less palatable to poultry and It feeding value must be discount ed. Pound to n paste two anchovies, or use n ten spoonful of anchovy pnstc; dust alt with a tenspoonful of salt, n- few dashes of paprika and n 'snltspoonftil of white pepper; sprinkle lightly with four tnblepoonfuU of orange Juice, then pour over n French dressing nnd serve nt once, To make the French dressing, use 'four tnblespoonfuls of oil to one of strong vlnegnr, n little onion Juice, If liked, nnd snlt nnd cay enne pepper to taste. The addition of a pinch of mustntd and n teaspoonful of powered sugar Improves the flavor for some palates. Cauliflower Salad. Soak In cold salt water n firm hend of cauliflower for a half hour, to remove nny Insects; put to boll whole and when tender set aside to cool. Put In a salad bowl nnd garnish with four pimentos cut In dice, with ten stuffed olives finely chopped. Serve very cold with French dressing. Combination 8alad. Make a French dressing and serve with a cupful each of celery, cucumber, tomato, apple and a few spoonfuls ench of green peppers, radish nnd young onion, nil sliced thin. Serve on a bed of watercress or shredded lettuce. Tomato 8atad. Scnld, peel nnd chill six Arm, ripe tomatoes, cut in halves. To one cupful of whipped crenm ndd two tnblespoonfuls ench of lemon Juice nnd prepared horseradish, also seasoning of snlt, poprlkn and mustard. Place tomatoes on lettuce leaves, heap the dressing on each lightly, sprinkle with chopped pimento and serve. The secret of thrift Is knowledge; knowledge ot domestic economy saves Income; knowledge of sanitary lawa aavea health and life. CORNMEAL DISHES. The cornmeal made by the old mill ing process. In which the germ was left 111, will not keep as well as the fine cornmeal. The home grinding of cornmeal saves the genn and other nutrients that are destroyed or lost by the new Droc- ess. When possible to buy this prod uct in small quantities, or, still better, grind it at home In a small mill, it will be found very superior In flavor. More liquid nnd more fat should be used In the fine cornmeal made by the new milling process than with the coarser ground meal. . For cornmeal mush, take one cupful of cornmeal, a teaspoonful of salt and add three and a half to Ave cupfuls of boiling water or scalded milk. Mix the meal with enough cold wnter to pour, then add to the boiling, suited water, stir constantly until smooth. Cook for four hours In a double boiler or In a tireless cooker over night. It cooked over the direct heat less time will be needed for cooking; but it will need to be carefully watched. Poured Into n small breadpan, well greased, the mush will mold to be sliced for breakfust and fried In a little hot fat Serve with sirup or bits of bacon. Cornmeal and Oat Cookies. Take one cupful each of cornmeal, rolled oat, molasses, buckwheat flour, a tea spoonful of salt, a cupful of sour milk, a half-cupful of fat a half-tenspoonfut of soda, a half-teaspoonful of nutmeg and one-quartcr-teuspoonful of ginger. Heat the cornmeal, tho molasses, salt and milk with the rolled oats, stirring constantly until it becomes a thick paste. Itemove it from the Are, add fat, sodn, flour and spices. Koll thin and bake In a moderate oven. Indian Pudding. Heat two nnd one half cupfuls of milk, add six table spoonfuls of cornmeal, mixed with one cupful of cold water or milk. Add a half-cupful of molasses, a half-tea-spoonful each of salt, ginger and cln nnuion. 8tlr in a half-cupful of chop ped suet, which has been lightly sifted with corn flour, a half-cupful of raisins and bake, stirring often for the first keif-hour. Take one cup ful of cooked diced potnto, n medium tlzed onion, minced, browned In two tnblespoonfuls of fnt. Add one cup ful of cooked rolled oats nnd sufll dent boiling wnter to cover. Simmer until tho vegetables nro tender; then add two rupfuls of hot milk, three tea spoonfuls of snlt, pepper, celery, salt nnd pnrsley. Cereal Loaf. -Take two cupfuls of hominy grits, n half cupful of chopped neat, two tablespoonfuls of minced onion, two tnblespoonfuls 6f minced celery, salt, paprika und soup stock to shape the mixture Into small cakes. Brown In n smalt amount of hot fat Serve with tomnto or horseradish sauce. Barley and Meat Casserole, Take a cupful of finely chopped meat, two cupfuls of cooked barley, one and half cupful of canned tomntoes, two tnblespoonfuls ot minced pimento, two tablespoonfuls of minced onion und salt nnd pepper to taste. Combine the Ingredients nnd place them In a well greased dish. Cover and bake thirty to forty-five minutes In a moderate oven. Hominy grits may be substi tuted for barley. Cold boiled rice may be used in the same way In place of pastry or corn meal, making a most appetizing pie. Barley Sponge Cake. Take one and a half cupfuls of barley Aour, four eggs, one tablespoonful of lemon Juice, one and a half cupfuls of corn sirup, one-fourth of a teaspoonful of snlt and two teaspoonfuls of baking pow der. Separate the yolks and white of the eggs, beating each well, stir in the sirup und Aour sifted with the dry Ingredients. Bake In a moderate oven. Barley Aour does not keep as well as wheat Aour, so It should be bought In small quantities. Pastry Is better used the same day, when prepared with barley Aour.
