Rules and Regulations

9. All subsequent receivers of eggs
should use care and intelligence in
the handling of these eggs and when
the date on the egg candling certifi
cate shows that 48 hours have elapsed
since the eggs were candled, they
should b'e recandled if the tempera
ture is over 60 degrees Fahrenheit.
If the temperature is below 60 de
grees Fahrenheit they should be re
candled in seven days.
10. The following form of certifi
cate, to be printed on 3 1-2 by 6 1-2
cards or sheets, is recommended by
the national food control officials and
the United States Food Administra
tion and is adopted by the Department
of Agriculture of the State of Florida,
to be placed In each case of eggs by
the shipper or seller.

least suspicious if not dangerous and
mainly for the reason that the dan
gerous kinds of dirt and the Innocu
ous kinds may be all mixed together.
Usually dirty surroundings and dirty
habits go together. Such facts show
that filth Is, generally speaking, Inim
ical to health and Is a subject for the
health officer. There Is a difficulty,
bowever, In that there Is In practice
little, If any, discrimination among
the different kinds of filth.. That Is to
say, the health officer should recog
nize what forms of uncleanliness are
most dangerous and attack those first.
He will find that a campaign for street
cleaning will result In but little as a
vital factor In sanitation, while a cam
paign for sewers and the abolition of
open privies will result In great bene
fit to the public In general.
