There isn’t ~ any mystery about / cooking and bak j) mg today; this v ~ „ Sj|f “four-point plan” eliminates the el ement of chance, and insures uni form results, day after day: 1. test ed recipes; 2. accurate measure ments; 2. proper methods of mix ing; 4, correct temperature for cook ing and baking. Reliable recipes and good ingre dients are available by the score. When you've found the ones you like, stick to them! Marked meas uring cups and spoons have done aw ay with the old time “pinch” of this, and “smidgin” of that, and directions for mixing are a part of every tested recipe. Thermometers of every kind insure the proper tem perature for cooking and baking; thermometers for deep fat frying eliminate grease-soaked doughnuts or croquettes; there'll be nc sticky, runny frost in gs or candy that won’t “set,” when the cooking is done with candy thermometers; meat thermometers mean roasts that are tooked to just the right degree of “doneness”; and oven thermome ters are practically indispensable for the countless baking jobs in volved in feeding a family. You’ll fir'd the recipes below meet the re quirements of the four-point plan. You’ll want to add them to your tile of tested recipes for “Just Good Food.” Silver Cake. (Makes 2 9-inch layers) 2 n .4 cups cake flour 4 teaspoons baking powder \2 teaspoon salt cup butter 112l 1 2 cups sugar 1 cup milk teaspoon almond extract 4 egg whites (stiffly beaten) Sift together the flour, baking pow dr;. and salt. Cream the butter, and add 1 cup of the sugar ciladu ally, beating) un- V~ ~ • til smooth and r * * r / fluffy. Beat t e egg whiles until stiff but not dry. and gradu ally beat :n ti e remaining cup of sugar. Fold into the cake batter. Bake ;n 2 greased 9-inch layer cake pans in a moderately hot oven (375 degrees) for 25 to 30 minutes. Roiled Icing. 2'z cups granulated sugar 1 2 cup light corn syrup 5 4 teaspoon salt *2 cup water 2 egg whites 1 teaspoon almond extract Cook sugar, corn syrup, salt and via'tr together to the firm ball stage (250 degiees). Pour the hot svrup slowly into the well-beaten egg whites, beating constantly. Add al mond extract and continue beating untit the frosting will hold its shape when tossed over the back el a spoon. Should icing become tea stiff to manipulate easily, a small amount of hot water may be added. Lemon Apple Cake Filling. Pate and grate one large, tart acpie. (There should be 1 cup of grated oulp). Add 2 tablespoons of lemon rind s rated, l cup sugar. 1 t?gg, beaten. ar d 1 tablespoon of qmck-cooking tapioca. Cook ever hot water until thick and clear— about 15 minutes. Cool, and spread generously between the layers of a cake. The filling is especially good in white cake. Liver Croquettes. (Makes 10-12 croquettes) 3 4 pound beef liver 1 teaspoon baking powder Boiling water 2 tablespoons onion (grated) 1 cup fine bread crumbs (mois tened with 2 tablespoons water) r g cup thick white sauce 2 eggs (well beaten) 1 teaspoon salt ’i teaspoon pepper Cover liver with boiling water to which baking powder has been add ed. Cook a few minutes until liver begins to get tender. Remove from water, cut off tough skin or connec tive tissue, then grind. Mix with bread crumbs, white sauce, and eggs well beaten. Season to taste and cool. Shape into small ball croquettes. Fry in deep fat (375 degrees) until golden brown. Drain on unglazed paper. Serve at once with hot tomato sauce. If desired, croquettes may be dipped in crumbs, egg, then crumbs again before deep frying. Lemon Meringue Pie. I cup sugar *4 cup cornstarch I I teaspoon salt 2 :i cup cold water 2 .: cup boiling water 3 egg yolks 1 tablespoon butter ’i cup lemon juice 1 teaspoon lemon rind (grated) Combine sugar, cornstarch and salt. Add cold water; stir until smooth. Add boil mg water and *^\\) cook, stirring con- /aT-'nW stantiy, until mix- / 1 \ ture is clear and I /) J thick. Cook 3 min- \\ / utes longer. Beat egg yolks; stir N — ■ cooked mixture into them. Add re maining ingredients, return to flame and cook 1 minute. Pour immedi ately into baked pie shell. Top with meringue. Meringue. 3 egg whites 6 tablespoons sugar *8 teaspoon salt Beat egg whites partially; then add sugar slowly, beating until mix ture is stiff. Bake in siovv oven (300-degrees) for 18 minutes. Apple Sauce Doughnuts. 2 tablespoons shortening 11-*l 1 -* cups brewn sugar 2 eggs (beaten) 1 cun apple sauce ’2 teaspoon salt 1 tea.'peon s >cia *2 teaspoon cinnamon *2 teaspoon nutmeg 3 5 i cups breaJ flrur 4 teasp<»4>i $ bak:ng powder Cream shortening ar.d add sugar; blend thoroughly. Gilliam for a synopsis of the city charter for use by his command. Judge Gilliam dug back into the files of 1927, the last time the char ter was drawn, and uncovered the following laws: Arrest and fine of $1 for walking along a public street while nursing a nosebleed. Arrest and fine of $1 for walking on the streets if deformed, diseased or maimed. A fine of $25 for playing a musical instrument in a public place be tween 9 a. m. and 9 p. m. A fine of $25 for performing acrobatics on the street and there by frightening horses. . . A fire of $l9O for wearing masks or false faces and frightening norses. C—Cecil King , youthful long-term felon accused of committing a series of holdups after fleeing prison a few months ago, drew an additional 25-year term for robbing Edward Carroll, a Ra leigh taxi driver.
